Black Beans & Rice
Ingredients
- 1 TBSP olive oil or 2TBSP butter (non-vegan option)
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1-2 cloves garlic
- 1 can black beans
- 1/2 cup frozen or fresh corn
- 1 cup rice
- 2 cups of water
Seasonings
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes
- 2 splashes of Worcestershire sauce
- 1 tsp salt
Directions
- In a deep skillet add olive oil and turn on to medium heat
- Add onions, peppers and garlic. Sautee 3-5 minutes
- Add undrained beans and corn, mix together
- Add seasonings, mix together
- Stir in rice
- Stir in water
- Bring to a soft boil on medium heat
- Cover and turn heat to low
- Cook for 20 minutes
- Turn off heat, leave pan for another ten minutes
- Mix and Serve
