Black Beans & Rice

Ingredients

  • 1 TBSP olive oil or 2TBSP butter (non-vegan option)
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1-2 cloves garlic
  • 1 can black beans
  • 1/2 cup frozen or fresh corn
  • 1 cup rice
  • 2 cups of water

Seasonings

  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes
  • 2 splashes of Worcestershire sauce
  • 1 tsp salt

Directions

  1. In a deep skillet add olive oil and turn on to medium heat
  2. Add onions, peppers and garlic. Sautee 3-5 minutes
  3. Add undrained beans and corn, mix together
  4. Add seasonings, mix together
  5. Stir in rice
  6. Stir in water
  7. Bring to a soft boil on medium heat
  8. Cover and turn heat to low
  9. Cook for 20 minutes
  10. Turn off heat, leave pan for another ten minutes
  11. Mix and Serve
