Chicken and Dumplings

Ingredients

  • 1 whole chicken 3-4 pounds
  • carrots (cut up)
  • celery (cut up)
  • potatoes (cubed)
  • Dumplings
  • salt and pepper to taste

Getting started

  1. Place chicken in Dutch oven and add about 4 cups of water plus 2 large pinches of salt. Cover.
  2. Bring to a boil, then reduce to a simmer.
  3. Cook chicken for 1 - 1.5 hours
  4. Remove chicken to cutting board to cool.

Straining the Broth

  1. Pour the remaining liquid(chicken broth!) through a wire strainer into a glass bowl. It will be very hot.
  2. Clean up the pan.
  3. Add the broth back to the pan

Adding the Vegetables & Deboning the Chicken

  1. Add vegetables to the pan
  2. Remove the meat from the chicken, shred into pieces
  3. Put chicken into the pan and mix everything together
  4. Cover and simmer for 40 - 45 minutes until the vegetables are cooked.

Adding the Dumplings

  1. Mix up Dumplings
  2. Drop dough by the tablespoon full into the simmering liquid
  3. Cover and let simmer for 10-15 minutes, until dumplings have cooked
  4. Remove from heat and let it cool for 10-15 minutes
  5. Serve and enjoy!
