Chicken and Dumplings
Ingredients
- 1 whole chicken 3-4 pounds
- carrots (cut up)
- celery (cut up)
- potatoes (cubed)
- Dumplings
- salt and pepper to taste
Getting started
- Place chicken in Dutch oven and add about 4 cups of water plus 2 large pinches of salt. Cover.
- Bring to a boil, then reduce to a simmer.
- Cook chicken for 1 - 1.5 hours
- Remove chicken to cutting board to cool.
Straining the Broth
- Pour the remaining liquid(chicken broth!) through a wire strainer into a glass bowl. It will be very hot.
- Clean up the pan.
- Add the broth back to the pan
Adding the Vegetables & Deboning the Chicken
- Add vegetables to the pan
- Remove the meat from the chicken, shred into pieces
- Put chicken into the pan and mix everything together
- Cover and simmer for 40 - 45 minutes until the vegetables are cooked.
Adding the Dumplings
- Mix up Dumplings
- Drop dough by the tablespoon full into the simmering liquid
- Cover and let simmer for 10-15 minutes, until dumplings have cooked
- Remove from heat and let it cool for 10-15 minutes
- Serve and enjoy!
